Bangers & Mash

So, out of all the foods I have posted… this juuuuuuust might be my favorite. It was easy to make and it satisfied my wintry comfort food desires so so so well! I don’t really miss many SAD foods, but I do miss Mashed Potatoes. For these bangers n mash, I revised my mashed cauliflower recipe to include roasting them rather than steaming them and it was SO much more successful, kinda smokey and less watery. Also…using a FOOD PROCESSOR instead of a fork! Woah, now there’s an idea! (in my defense, I didn’t have one before). This recipe serves 2-4 people (depending how hungry everyone is) and is friggin’ AWESOME!

  • 4 of your favorite sausages
  • Mashed Cauliflower
    • 1 head of Cauliflower
    • 1/2 cup of water (or less as needed)
    • salt & pepper
    • 1 tsp chopped fresh rosemary
  • Onion Gravy
    • 1 HUGE onion or two small onions, halved and then cut into slices
    • 2 tbsp olive oil
    • 1/2 to 1 cup of water

yeah… that’s all the ingredients. I didn’t really need a list did I?

Preheat the oven to 375.

Chop the cauliflower florets and disregard the stems. Arrange them on a baking dish, sprinkle with salt, pepper, and chopped rosemary. Put them in the oven and roast them until they are soft and lightly browned on the tops, this will probably take around 15-20 minutes.  When they are finished throw them in the food processor and slowly add water until they are at the consistency you want (it probably wont take much water to get them to a ‘mashed potatoes’ type texture).

Onion Gravy

To make the onion gravy, add the onions and olive oil to a cast iron skillet and saute until the onions are very browned and caramelized. Add water after they are sufficiently browned and saute for 5 minutes to form the onion gravy. Turn them to low and simmer as you cook everything else. Add salt to taste.

Bake the sausages on the center rack of the oven for around 10-15 minutes, or until cooked through. I cooked mine from frozen, so it took a bit longer. If you have a grill, go for it man — I am jealous!

Attempt to get everything finished at the same time and serve in a heaping pile of deliciousness!
