- 1# of sweet potatoes, pealed & cut into 1″ cubed
- Water for boiling
- 1 cinnamon stick
- 4 cloves
- 2 star anise
- 1 tsp salt
- 1/2 cup coconut milk (or regular milk if it’s easier for you)
Throw all the ingredients (other than the coconut milk) into a pot and boil for about 15 minutes.
Strain the potatoes. Pick out the spices. Add the coconut milk. MASH. EAT.
This is my go to sweet potato recipe. I eat it before, during, and after almost every lifting session. Sometimes I leave out the coconut milk, and it’s still tasty, just not so smooth. Sometimes, I add butter if I’m feeling like I want some more fat.
