Baked Salmon with Onions, Dill, & Lemon

This is a super simple standby of mine that, no matter how many times I have it, always feels really decadent. It’s super delicious and full of healthy fats.

  • 1# fresh salmon filet
  • 2 tbsp olive oil
  • 1 small onion
  • 1 cup of chopped fresh dill
  • 1 lemon, sliced
  • Salt

Pre-heat your oven to 400 degrees. Put the salmon in a glass baking dish. Sprinkle some salt on the salmon and then cover the filet with sliced onions, dill, and lemon slices. Drizzle olive oil over everything. Throw the dish in the oven for about 15 minutes or until the salmon is cooked how you like (I usually go for a little pinkish on the inside).

Serve with your favorite side of veggies.
