Shrimp & Artichoke Scampi over Roasted Broccoli

(Sorry for the shitty picture… just wasn’t working today)

Ingredients:

  • 12 shrimp
  • 5 baby artichoke hearts (from a can)
  • 1 clove garlic
  • 1/2 a tbsp Butter
  • 1 tbsp olive oil.
  • 1 tsp chopped rosemary
  • 2 cups roasted (or steamed if you want) broccoli.

Method

In a small saucepan, heat the olive oil and butter to medium high. Add in the garlic and rosemary. Cook for a minute and then add the shrimp and artichokes. Sautee until the shrimp have cooked through. Pour the sauce over the broccoli and serve hot.

3/3/13 – Food Log

I slept for like 12 hours last night. It was amazing. I totally needed it.

Breakfast:
5 scrambled eggs with:

  • 4 shiitaki mushrooms
  • 1 tomato
  • 1/4 cup green onions
  • 1/4 cup chopped parsley
  • 1 tbsp heavy cream

I’m trying to give up coffee/caffein since I haven’t been able to fall asleep well lately. It’s currently sucking my ass… I want coffee so bad. I used to pride myself on NEVER drinking caffein, I am apparently not that person anymore. It’ll stop sucking after a few days I’m sure, but right now it totally blows. ::sigh::

Lunch:

  • 2 sweet potatoes
  • 1/2 cup roasted cauliflower
  • The entire recipe above

Dinner:

  • 1/4# ground beef
  • 1/2 cup tomato sauce
  • 1/2 an eggplant
  • lots of parsley
  • 2 cups rosted cauliflower

ughhhhhh i ate too many veggies… my belly hurts. to. much. fiber.
