Grilled Coconut & Peanut Chicken Kabobs

This picture doesn’t do these delicious toasted coconut kabobs justice by any means. But seriously, holy mother of god these were good! I am in love and will definitely be making these again.

Ingredients:

  • 3 chicken breasts
  • 1/2 cup coconut milk (I use Thai kitchen, and I think it’s so much better than other brands I am specifically mentioning here)
  • 1 tbsp peanut butter
  • 1 tsp powdered ginger
  • juice of lemon
  • 1/2 tsp turmeric
  • 1/2 tsp salt

Method:

Cut the chicken into cubes. Mix the other ingredients in a large bowl and mix in the chicken to marinade for 10-15 minutes. Skewer them, sprinkle with shredded coconut flakes, and throw them on a heated grill. Flip them after 5 minutes, paint with leftover marinate and sprinkle with more coconut flakes. Cook for another 5-10 minutes or until the chicken is firm and cooked through.

I served this with grilled veggies, steamed rice, and pico-de-gallo. My meal came out just under 500 calories and was fucking awesome 😉
