Food Prep Sunday

Lots of food prep, house cleaning, and relaxation today. It was lovely. Feeling totally ready for another week of healthy eating and working hard (… but not too hard, since it’s back off week). I went on a 1 mile ruck today, which was nice, though still kinda hard on my traps. Looking forward to it getting a little easier on my traps and rhomboids eventually — they are always so pumped when I get back from the walk. I’ve actually decided to just keep the bricks in my pack and ruck wherever I go. Considering I live in NYC, and have a big athletic dog that needs a lot of walks, this has really helped me stay up on my goals of rucking 2 or 3 times a week. Honestly, this has me rucking every day. Which I think will be good training for the next few weeks before the GoRuck challenge.

Food Log:

I have to admit I might like cooking more than eating so food prep day is great for me. I can just cook all day and not feel like it’s a waste of time. My fridge is PACKED with meals for the week.

Here’s the rundown of what I made.

  • 3 pounds of chicken breasts, grilled.
  • 2 pounds of organic grass fed ground beef – made into ‘taco meat’.
  • 1 pound of salmon, grilled (I ate half of this for dinner).
  • 2 zucchini’s grilled (I ate one of these for dinner)
  • 3 containers of the Indian chicken and chickpea meal I made yesterday.  In tupperware and ready to be brought to the office for lunch.
  • Lots of fresh fruits and veggies washed, cut up, and ready to be cooked with later this week

SCORE!

Snack today: Tomato & Mozzarella with fresh Parsley
